The United Nations has declared 2016 the International Year of Pulses. This is an ancient term for foods we often refer to as legumes: lentils, chickpeas, kidney beans and black-eyed peas are just a few types of pulses. They are considered a superfood and are often an excellent source of protein. They're also easy to produce, and provide endless nutritional benefits like fiber, vitamins, and minerals.
Pulses also leave nitrogen in the soil that they grow in, making them "good for the plate and good for the planet."
